After brewing beer at home, becoming a wine nerd, and working for Sparkman Cellars on the weekends, the spark of starting a distillery began after going to England twice to visit friends and making the tourist events all about gin. Kim became fascinated and convinced everyone can like gin, and that it’s mostly about finding the right botanical blend for the right person, which also led to their custom gin making class called GINiology™.
