The Ultimate Mother’s Day French Toast
I love this French toast that’s tinged with citrusy marmalade!
Serves 2, double or triple it for more
2 pieces bread, 1.5cm thick
1 egg
2-3 tbsps milk
2-3 tbsps cream
1 tbsps marmalade
1 tsp vanilla
2 tbsps butter
1 tbsps oil
To serve:
Banana, sliced lengthwise
Berries
Maple syrup
Yoghurt
Whisk egg with milk, cream, marmalade and vanilla. Pour into a shallow dish. Add bread slices and press gently. Leave for 5 minutes for bread to slurp up mixture, then carefully turn over and soak for a further 2-3 minutes.
Heat butter and oil in a pan, to medium-hot, until it foams then subsides. Drain bread of any excess egg mixture and slide each slice (do one at a time if your pan is small) into the pan. Lower temperature to medium and cook until golden (about 3-4 minutes) then carefully flip over to continue cooking for another 2-3 minutes or until cooked through.
Serve with grilled banana, berries, maple syrup and yoghurt. Happy Mothers’ Day!
