Stelios Theocharous was born in Cyprus and after studying in the UK he worked for his family fish & chip shops, which they still own. In 2006, Stelios established Ceres, a batter supply company named after the Roman goddess of harvests, which supplies and advises the UK frying and restaurant trades.

And if this wasn’t enough for one man, he also hosts and produces the “Ceres Podcast” which regularly appears in the top 100 Food podcasts in the UK charts.

Having forged close relationships with Chefs, Food Producers, Growers, Hoteliers, Suppliers and Restaurateurs, in this episode Stelios discusses “why” increasing numbers of UK fryers are cooking imported foreign-caught frozen fish, rather than using fresh fish landed by UK boats.

And my guest suggests a carefully considered marketing strategy aimed at reminding UK fryers of the benefits of cooking fresh fish, both for them and for their customers.
