As we keep jumping merrily from the past to the present of our homeland, we go back to one of our favourite subjects: the great food that makes our region so unique. We Tuscans are particularly jealous of our specialties, so much that foreigners think that it's weird, sometimes ridiculous. It is an integral part of our culture, maybe an ancestral memory of the times when malnutrition was widespread around here and having something tasty in your plate was worth celebrating. Few of our specialties have become so intimately linked to a city as the recipe that has become the pride and joy of Leghorn: the "cacciucco". It is a weird dish, doesn't even look Tuscan and the name means nothing in our language. The explanation? It wasn't born here but very far away, in a smaller town on the coast of Turkey. To bring it here would have been one of the many merchants that relocated to Leghorn in the 1700s, giving to Leghorn its unique cosmpolitan feel. If you listen to the full episode you will learn the many stories on the origins of this dish, the golden rules to have a "typical and traditional" cacciucco, the infamous five Cs and a great recipe to cook it in your kitchen. It won't be as good as the one you can eat in Leghorn but it won't disappoint for sure!
