Tartrazine, identified by the code E102, is a synthetic azo dye extensively used as a yellow coloring agent in a wide range of consumer products. It is one of the most common artificial dyes, frequently found in fruit beverages, alcoholic drinks, ice cream, candies, cakes, jellies, and various baked goods. Additionally, it is a common ingredient in processed snacks like cornflakes, chips, and chewing gum, as well as in condiments such as mustard, jams, marmalades, and numerous fast-food sauces.
The application of this dye extends beyond the food industry; it is also utilized in personal care and hygiene products, including shower gels, soaps, cosmetics, mouthwashes, and toothpastes. This is a significant health consideration because approximately 64% of substances applied to the skin are absorbed into the body, meaning cosmetic additives can be as impactful as those found in food.
While some international health organizations maintain that tartrazine is a safe compound, other scientific reports and public interest organizations highlight potential adverse effects. Findings suggest that the dye may be linked to early uterine contractions, which can lead to miscarriages, and the development of deep depression.
A major concern regarding tartrazine involves the presence of carcinogenic contaminants that can occur as byproducts during its manufacturing process. In some regions, where it is known as Yellow 5, the dye has been found to contain impurities such as benzidine and 4-aminobiphenyl. Benzidine is classified as a confirmed human carcinogen (Group A1), with documented evidence linking it to increased rates of bladder cancer and related mortality among exposed individuals. Research also suggests that benzidine exposure is associated with an elevated risk of developing lung cancer through the activation of specific cellular pathways.
Similarly, 4-aminobiphenyl is identified as a primary factor in the development of human bladder cancer. Its metabolites are capable of forming DNA adducts, which can induce mutations—particularly in the p53 gene—directly contributing to the formation of cancerous tumors.
Because tartrazine is just one of many thousands of potentially toxic substances that individuals may encounter daily through their diet and hygiene routines, understanding its presence and risks is essential for managing overall chemical exposure.
